La Donna Angelica is the fruit of olives grown exclusively on the family farm at an altitude of between 800 and 900 meters above sea level, with a south-southeast exposure. The medium-textured soils allow us to produce a unique blend of nine of the main Sicilian varieties. The hand-picked olives are cold-pressed in 12 hours in state-of-the-art equipment. La Donna Angelica is immediately filtered and stored in stainless steel containers in a temperature-controlled environment, in the absence of oxygen thanks to the use of nitrogen, which preserves the organoleptic characteristics.
Taste description:
Light and fairly dense golden yellow color.
The nose gives off notes of ripe citrus fruits, grapefruit and lemon, pine apple and vegetal accents of artichoke.
On the palate it is soft and fluid, with vital support from the phenolic note, the acridity and bitterness being present in great balance but without incisive intensity.
Accompanies grouper fillets with cherry tomatoes and chicken bites with almonds.
